See if you get better image quality then. Another thing you could try is stream video on TCP instead of UDP. Select TCP and start the camera in UAVcast. Open command promt and navigate to the gstreamer bin folder. Paste the TCP command you see on the camera page tips section. Change the IP (Raspberry IP) and port, 14550.

Schachti I would recommend to upgrade to version 2.0.0. Click the version number to access the update page.
After you have updated application, try start gstreamer with this pipline on you GCS computer.
gst-launch-1.0 -v udpsrc port=5600 caps="application/x-rtp, media=(string)video, clock-rate=(int)90000, encoding-name=(string)H264" ! rtph264depay ! avdec_h264 ! videoconvert ! autovideosink sync=f

Are you connected via VPN when you use modem? Or do you use direct connection?
